Any amount of leaking can cause the computer to think it's running lean when it's not because it can pull in air--a vacuum leak upstream of the catalytics.
There are 4 valves per bank, all collected upstream of the catalytic. If there's a leak, there can be vacuum on the pipes that have their valves closed from the one that's open. Recall, they are trying to scavenge--that only happens because of lower pressures from the flow--so a leak can draw in cooler air from the engine bay and affect the O2 sensors.
No, the head is fine. If you are worried about a small leak use the remflex gaskets. All the headers I have installed I have used these with no leaks. I also use arp header bolts and torque them to 20ft lbs. Sucks but can be done.

Gasket and rtv. The machine surfaces have some tolerance. The gasket and rtv will take up the slack and compress and seal. Your surfaces look just fine. Torque to spec and drive it.
If you really want your mind blown, take a flat level and see if your exhaust flange on the manifold is flat. 😉
Brake clean, red scotch brite, and remflex gaskets is the way I’m going it seems. I used rtv on my supercharger before and had to use a pry bar to get it off, so no rtv on the headers for me - not enough room
